We always keep the honey from each hive separate from the other hives, we never mix one batch with another. It's kinda like Single Barrel Whiskey. Each batch from each hive has a UNIQUE color, texture and taste. Look at the difference between these two jars!

Our honey is RAW, it's not pasteurized. It contains a LOT of local pollen. Many people ask "what kind of honey is it?" I always say that it's Thousand Oaks Residential!

We only "take" the honey when it's ready. And that is up to the bees and nature. Generally, 3-4 honey runs are made each year between April and November. We have to remove the full honey frames, remove the wax cap the bees put on to seal it, run it through a manual centrifuge, then filter it to 600 microns to remove foreign objects.
